This is my failsafe solution to losing weight – make a tabbouleh!
Here is my recipe. It makes enough for two people for two days, and I suggest you eat it with a slice of chicken, or a boiled egg for protein and a bit of variety. The chopping is a bit of a pain, but you then don’t have to any meal prepping for 4 meal equivalents
I measuring cup bulgar wheat
½ measuring cup of good quality olive oil
Juice of two lemons
2 x 100g packets of flat leaf parsley, chopped
1 x 50g pack of mint, destalked and chopped
5-6 tomatoes, depending on size, finely chopped
1 x cucumber finely chopped
1 x red onion, finely chopped
1 teaspoon ground cumin
½ teaspoon ground cinnamon
Salt and pepper
Mix the first 3 ingredients together first and leave to separately soak whilst you do the chopping.
Chop the next five ingredients, relatively finely. I don’t destalk the parsley as it is such a hassle, so instead I chop down to where the main stems start and discard the thickest part of the stems.
Sprinkle the ground spices over the chopped veg and herbs, stir and then add the soaked bulgar wheat, and voila! Refrigerate.
You now have a filling but low calorie meal that can be eaten on its own or supplemented by a slice of chicken or turkey, or perhaps a boiled egg. Eat this for lunch and supper for 3 days and then check your weight!
Cook’s tip : when chopping the onion hold a metal teaspoon between your teeth and you wont cry!
